Kabbage spoke with Edgar’s Proof & Provision Food & Beverage Director, Guido Piccinni, on life as a business owner, the challenges he faces and how to overcome them. We also asked about the local Atlanta bar’s upcoming theme pop-up bar that celebrates Harry Potter. Patrons will enjoy themed food and beverages and see a showing of ‘Harry Potter and The Half-Blood Prince’ at the Fox Theatre at 8 p.m.
Tell us about the business. Who are you?
Edgar’s Proof and Provision is a modern, yet rustic space where guests can escape to enjoy a hand-crafted or barrel-aged cocktail, and dine on chef-crafted gourmet comfort food. Located inside the historic Georgian Terrace Hotel basement is a thriving restaurant and bar. The hideaway places an emphasis on barrel-aged cocktails, not speakeasy shtick.
What made you realize this is what you wanted to invest yourself in?
As an Italian native, I have always had a passion for entertaining. The hospitality industry was a natural fit.

What obstacles, if any, have you had to overcome regarding your business and how you maintained your determination during that time?
Ensuring I have a healthy work life balance will always be an obstacle for me to overcome. When you are passionate about what you do, it makes it very hard to ensure you spend time with the ones you love. This is something I consistently work on.
Was there anyone that created a huge impact in helping you and your business get where it is today?
My parents and education has always been the motivating force for me to do my best! After getting married and having a phenomenal son, I strive every day to be a better son, husband, father and leader. All those attributes drive results in my professional environment.
What advice would you give to someone just starting a business?
The world is small, our industry is smaller, learn as much as you can, stay hungry and stay humble!
How do you see your business changing/growing in the future?
Expanding the scope of who we are is what I see in the near future. Understanding our customer base; not losing our identity and then doing more to ensure their needs are met is our number one focus.

Why Harry Potter? And why the Half-Blood Prince?
At Edgar’s Proof & Provision, we love to collaborate with our neighbors and when we found out that the Fox Theatre was going to be doing the Harry Potter movie series, we wanted to be a part of it. We felt that the Half Blood Prince showing was the best night to host a pop-up since it’s the late show on Saturday night and a big crowd would already be drawn to it.
How did you come up with the idea?
We came up with the idea after finding out about the Harry Potter movie series happening at the Fox. We know how large of a following the Harry Potter series has in Atlanta, and we think that Edgar’s P&P is the perfect place to gather. Located in the basement of the Georgian Terrace, the interior is a mix of modern and rustic touches that feel like a speak-easy, or in this case, The Three Broomsticks.
Will there be themed cocktails and foods?
Yes! Beverage Director James Wampler is mixing up a few magical concoctions for the night including Butter Beer and a special Potter Punch. Other themed cocktails will be available as well.
What do you hope to gain from this experience?
We hope to garner attention for Edgar’s P&P and how it really is a secret hidden gem of the city. With delicious cocktails and fun, small bites, Edgar’s P&P is a must-try by any Atlantan and is the perfect place to go before a show at the Fox Theatre or a night out on the town.
If you had to pick a house P&P belongs in, which would it be? Why?
Probably Slytherin because P&P is in the basement of the Georgian Terrace, just like Slytherin quarters are in the basement and are dark and dungeon-like.
Do you think you’ll do another pop-up theme bar? If so, would you continue the Harry Potter theme or do something else?
We are open to doing other pop-ups in the future since we have seen such a large response! A lot of our staff and regular customers are huge Harry Potter fans, so I’m sure they would be thrilled to do more Harry Potter themed events.
